Midfielder Chong, 22, had been on trial at Hereford this summer, playing most recently at Nuneaton Borough on Tuesday.
He started at West Bromwich Albion and has experience at Telford, Banbury and Nuneaton.
He also played on Saturday in the Bulls' 2-0 win over West Brom's U21s.
Alvechurch, now in the Southern Premier Central at step three, said: "We are delighted to announce that Kobe has decided to join the Church for 23/24 season.
"We can't wait to watch this talented midfielder in action on Tuesday at Lye Meadow."
Chong tweeted: "I’m happy to be here, after last season I think this is the right next step for my football and I can’t wait to get started."
